Refried Beans


Refried Beans
(makes 2 side servings)

Ingredients

1 cup dried Kidney beans
Cumin
Olive oil or butter
1 small onion chopped
1/4 cup water
Salt to taste
1/2 cup shredded Old Cheddar Cheese

Directions

1. Soak your beans in clean water overnight; then boil them for 60 minutes with a few dashes of cumin. This method makes the beans more digestible.

2. Melt oil or butter in a pan and cook the onion until it's soft.

3. Add the beans and use a fork or potato masher to mash them up.

4. Cook the beans on medium, adding water, salt and the cheese. Mix it all up. They are done when the cheese is all melted.
