Vegetarian-ish Shepherd's Pie
(3-4 servings)


Mashed Potatoes
Butter or oil
S&P (optional)
Worcestershire sauce
1-2 packs of mushrooms, sliced or chopped
1 onion, chopped
1 head of cauliflower, chopped
1 large can of corn


1. Make your mashed potatoes as you like them, enough to top your pie. Set aside.

2. Preheat oven to 350 F.

3. In butter or oil, cook the mushrooms and onions on medium until soft, about 5-10 minutes. Add cauliflower and cook a further 5 minutes or so. Season with S&P and Worcestershire sauce.

4. In a large pan (I used a 10-inch round pan); layer the mushroom mix, then the corn, then top with mashed taters. Cook about 20 minutes.
