Tzaziki Sauce
Tzaziki

Makes about 2 cups
Ingredients:
1 seedless cucumber, peeled and sliced thinly
Coarse salt
1 garlic clove, minced and crushed
1 1/2 cups plain Greek-style yogurt
1 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice (about half a lemon)
1 tbsp red wine vinegar
Directions
1. Put cucumber into a colander and sprinkle conservatively with coarse salt. Let drain at room temperature for an hour.
2. Squeeze out the cucumber a handful at a time to get as much moisture out as possible. Using a hand blender, blend to a mash.
3. Mix together the cucumber, garlic, yogurt, lemon juice and vinegar. Chill a little bit before serving.
