Sun Dried Tomato and Basil Pesto

Sun Dried Tomato and Basil Pesto
(Makes about 1 1/2 cups depending on how much olive oil you use)

1 cup Sun Dried Tomatoes (I used the ones packaged in olive oil)
1/2 cup fresh basil
2 tbsp fresh Parmesan
1 minced garlic clove
1/4 cup to 3/4 cups olive oil - we find 1/4 cup is plenty


1. Blend all ingredients except the olive oil. I used my hand blender and it worked very well!

2. Blend in your olive oil. Start with a 1/4 cup and add to achieve your desired consistency.

This gets better after it's been in the fridge for two days!
