Stuffed Mushrooms
Yield: 2 dozen mushrooms

About 2 slices day-old white bread, crusts removed
1 green onion, roughly chopped
1/2 red pepper, seeded and roughly chopped
1.5 ounces goat cheese
2 tbsp finely chopped fresh cilantro
1 ounce Mozzarella
24 large button mushrooms, stems removed and caps well rinsed
1 tbsp grated Parmesan


1. In a food processor or blender, pulse the bread until finely chopped. Transfer to a large bowl.

2. In a food processor or blender, combine green onion, red pepper and goat cheese, blend until well-combined.

3. Transfer to bowl with bread crumbs and stir. Add cilantro and Mozzarella and stir well.

4. Preheat oven to 350 F.

5. Stuff mushroom caps with filling and place on cookie sheet lined with parchment paper - place filling side up. Bake for 15-20 minutes until mushrooms are tender. Sprinkle with Parmesan and broil for about a minute until the cheese is golden.
