Shortbread Bites
Yield: Between 40-50 cookies

1 & 1/4 cups flour
3 tbsp brown sugar
1/2 cup butter, softened
Sprinkles if desired


1. Preheat oven to 325 F.

2. In a large bowl, whisk together the flour and sugar.

3. Add softened butter and knead the dough together until it comes together. Add sprinkles if desired and gently knead them into the dough until well blended.

4. On parchment paper, pat the dough down to about 8" by 5". Freeze for about 15 minutes.

5. Cut the dough into 1/2 inch squares and place on a parchment lined cookie sheet.

6. Bake for 18-20 minutes until lightly browned on the bottom. Transfer to cool on a wire rack.

Note: These are good for about a week, stored in a covered container at room temperature. They also freeze well.
