Rain's Mild Chunky Salsa
(makes ONLY about a cup and a half!!)

Ingredients
1 pint canned tomatoes with juice
1 large green pepper, sliced (we take this out for digestive reasons, but you can chop it up and leave it in)
1 onion, chopped
1 garlic clove, minced
1 tsp salt
Pepper
1/2 tsp cumin
1/2 tbsp lime juice
1/2 cup fresh chopped cilantro
Directions
1. In a large pot, combine all ingredients except cilantro.
2. Bring to a boil, reduce and simmer uncovered 1 hour, stirring frequently.
3. Let cool to room temperature then add 1/2 cup cilantro.
4. Jar and refrigerate until chilled.

Thanks Baili! :) I made one little adjustment. After we tasted it, we realized that it did not need any vinegar (I had apple cider vinegar in the original recipe), so I took it out of the recipe. I'm making another batch right now!

i reread it today and just remember that mom made it often and so do i but not often
we call it "chatni" though
and yes we don't add ginger mostly
