Potato Skins
(makes 6)

3 medium/large potatoes
Butter or olive oil, s&p
Nacho Cheese Dip
Cheddar cheese, shredded
Chives and Sour Cream for garnish


1. Preheat oven to 400 C.

2. Wash and pierce the potatoes. Bake for about an hour. Let cool.

3. Set the oven to low broil.

4. Cut potatoes lengthwise and carefully remove flesh of potato without breaking the skins. (save the flesh for mashed potatoes!!)

5. Brush with melted butter or olive oil, season with s&p. Broil for 5 minutes, flip and broil again another 5 minutes.

6. Fill with nacho cheese dip, top with Cheddar and broil until the cheese is melted. Garnish with chives and sour cream.
