Penne Alla Vodka
(Adapted from Williams Sonoma "Pasta")

4 cups Penne pasta, cooked as desired
5 large tomatoes
1/3 cup extra-virgin olive oil
2 garlic cloves, very thinly sliced
1/4 cup vodka
Salt and pepper, to taste
Dash Tabasco Sauce
1/2 cup whipping or heavy cream
Flat leaf parsley, chopped for topping (optional)


1. Peel and seed and dice tomatoes. (Depending on your taste, you might want to drain the tomatoes if they are too juicy)

2. Warm the olive oil in a large pan over medium heat. Add the garlic and sauté about 1 minutes. Remove the pan from the stovetop and add the vodka. Return the pan to medium heat and cook until reduced by half (as desired). Add the tomatoes, salt, pepper and Tabasco Sauce. Simmer uncovered about 10 minutes.

3. Add cooked pasta to the pan. Add the cream and cook, stirring, over medium heat until the pasta is well coated with the sauce, about 2 minutes. Pour into a large, shallow bowl. Add the parsley and toss briefly.
