Lemon Squares

Lemon Squares
(Adapted from Pillsbury)

For the crust
30-35 vanilla wafer cookies or Graham crackers (1 1/2 cups crumbs)
5 tbsp melted butter

For the filling
4 eggs
1 1/2 cups brown sugar
2 tbsp flour
2 tbsp unsalted butter, softened
2 tbsp lemon zest
1/3 cup lemon juice


1. Make your crust: Heat oven to 350 F. Crumb your cookies and blend well with the butter. Press into the bottom of a 9 x 9 square inch pan (or something around that size). Bake for 10 minutes and let cool slightly before filling.

2. Make your filling: Keep the oven at 350 F. Beat the eggs until combined. Beat in sugar, flour and butter. Stir in the zest and lemon juice. Pour into pan and bake 30 minutes or until edges are a light brown colour. Let cool completely before cutting.

Tip: Dip your knife in hot water before each cut, makes it easier!

Note: These look really soft, but trust me, they are well-cooked and delicious!!
