Homemade Pasta


2-3 cups unbleached flour***
1/2 tsp salt
4 eggs
Dash olive oil


1. On a clean counter, mix 2 cups flour and the salt with a fork.

2. Make a well in the center of the pile of flour and add the 4 eggs. Blend very well with the fork until it gets too hard.

3. Knead the dough, it'll be sticky. Add a little flour at a time until you reach a nice soft dough.

4. Add a dash of olive oil and continue kneading. You may have to add more flour to remove the stickiness.

5. Place in a clean bowl and let rest covered for at least 30 minutes.

Shape the way you like!

This recipe made enough fusilli for our pasta dinner for two; 27 raviolis, enough capellini for two and leftover mini angel-hair noodles for soup.

***I find that most recipes call for WAY too much flour, I always start with much less and add as I go.
