Green Onion and Potato Soup

Green Onion and Potato Soup
(serves 2-3)


3 large red potatoes, washed, peeled and chopped
10 green onions, washed and chopped
Splash of white wine (optional)
5 cups chicken stock
Dollop of sour cream or plain yogurt
Chopped chives


1. Heat butter in large pot over medium heat.

2. Add potatoes and sauté for 3-5 minutes.

3. Add green onions and sauté for 3-5 minutes more, making sure not to burn them.

4. If using, add a splash of white wine to the pot and deglaze the bottom of the pot. Add the chicken stock, bring to a boil, cover and simmer 30 minutes.

5. Blend when done. Season with S&P, add a dollop of yogurt and sprinkle with chives.
