Greek Veggie Pita Pockets
(Serves 2)

3 small zucchinis, sliced
1 pack of mushrooms, sliced
1 onion, sliced
1 tbsp olive oil (I used Kalamata oil)
2 tbsp Balsamic vinegar
S&P to taste
Pita bread
Tzaziki sauce


1. Preheat oven to 425 F.

2. Place veggies, olive oil and vinegar in a bowl and mix well. Season with S&P.

3. Place veggie mixture into a foil and seal well. Place on a baking pan and cook for 45 minutes.

Note for me: Tzaziki sauce made with sour cream.
