Greek Potatoes

Greek Potatoes
(Serves 3-4 as a side dish)


4 large potatoes, cut into 1/2 inch cubes
4 garlic cloves, chopped
1/4 cup olive oil
1 cup chicken broth
1 tbsp oregano
2 tbsp lemon juice
1 tsp salt


1. Preheat oven to 425°F.

2. Mix all the ingredients into a 2 quart glass baking dish.

3. Bake for 45 minutes total, turning the potatoes after about 20 minutes.

Note for me: June 2022 - next time try with half the olive oil!
