Greek Potatoes

4 large potatoes, cut in wedges
2 cloves garlic, sliced
1/4 cup olive oil
1 cup chicken broth (divided in two)
1 tsp oregano
2 tbsp lemon juice


1. Preheat oven to 400 F.

2. Mix all ingredients in a non-stick pan, reserving 1/2 cup chicken broth.

3. Bake for 40 minutes. Remove from oven, use a spatula to lift and turn potatoes. Add the reserved broth and cook another 40 minutes.
