Fusilli with Ricotta and Ham Sauce
(serves 4)


2 tbsp unsalted butter
2 tbsp flour
1/2 cup white wine
1/2 cup chicken or turkey stock
1 1/2 cups milk (pre-heated)
3/4 cup sliced ham
1 cup Ricotta cheese
Handful of chives
S&P to taste


1. Melt the butter in a sauce pan and add the flour, whisking for about a minute to make a roux.

2. Slowly add the wine and broth and bring to a simmer. Add the hot milk and whisk well.

3. On a low heat, add the ham and Ricotta, stirring well to incorporate. Sprinkle with chives and season with S&P.
