Four Cheese Pasta Sauce

1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1/2 tsp oregano
S&P to taste
2 x 500ml (16 oz) jars of tomatoes, crushed
1/4 cup grated Parmesan
1/4 cup grated Mozzarella
1/4 cup grated Cheddar
1/4 cup Goat Cheese


1. Heat olive oil in large pan over medium heat. Add onion and cook for 7 minutes.

2. Add garlic, oregano and S&P - cook for 1 minute, stirring constantly. Add tomatoes, bring to a boil and cook for 10 minutes.

3. Optional: Use a stick blender to smooth out your sauce.

4. Keeping the sauce hot on the stove, add the cheeses and mix with a wooden spoon until all is melted.

Note: Use any pasta that you like, we loved Penne with this sauce!
