 Fluffy Key Lime Pie

1 1/4 cups Graham cracker crumbs
1/4 cup unsalted butter, melted
1 1/2 cups whipping cream
1/4 cup boiling water
85g lime-flavoured gelatin
340g lime-flavoured yogurt


1. Preheat oven to 375 F.

2. Mix the Graham cracker crumbs with the melted butter and press into a 9-inch pie plate. Bake 8-10 minutes and let cool completely.

3. In a large bowl, whip the cream until soft peaks form. Set aside.

4. In another large bowl, stir the boiling water into the gelatin for about 2 minutes until it's all dissolved.

5. Whip in the yogurt until smooth. Fold in the whipping cream until you don't see any white colour.

6. Gently fold the filling into the pie crust, cover and refrigerate a good 4 hours.

Note: You can make this with any flavour of gelatin and yogurt!
