Croques Monsieurs
Croques Monsieurs
(Serves 2+)
Ingredients:
Baguette or sliced French Bread
(I use 4 thick slices of my No Knead Bread)
Honey Dijon or regular Dijon (the Honey Dijon gives it a nice sweetness)
8 slices Ham
Some grated Gruyere
Thyme
Cheese Sauce
2 tbsp unsalted butter
1 tbsp flour
1/2 cup milk, warmed (warming the milk really cuts down on the simmering time and it thickens nearly immediately)
1/2 cup shredded Gruyere
1/2 tsp regular Dijon
Directions:
1. Make the sauce: Heat the butter in a sauce pan on medium low until melted. Add the flour, whisk and cook about a minute without browning. Slowly add the warmed milk, whisking, until thickened, about 1 minute. Take off the heat and add the cheese and mustard, whisk then cover, keep warm and set aside.
2. Preheat the broiler to high. On each bread slice, spread Honey Dijon and layer ham.
3. Spread some of the cheese sauce on top of each piece and sprinkle with Gruyere (not too much). Broil until bubbly. Sprinkle with thyme. Cut the bread slices in three and serve hot!
