Chicken Fricassee

Chicken Fricassee (for 2)


Butter (about 1/4 cup at most)
3 medium red potatoes, cut into small pieces
1 onion, chopped
2 chicken breasts, cut into small pieces
S&P to taste


1.  Heat butter in a large frying pan over medium heat. Add potatoes and cook for about 10 minutes, mixing occasionally.

2. Add onions and continue cooking for about 5 minutes.

3. Add chicken. Cook, covered, for about 20 minutes or until the potatoes are fork-tender, stirring once in a while.
