Cauliflower Gratin

Cauliflower Gratin
Serves: 4-6

1 head cauliflower, cut into florets
4 tbsp unsalted butter
3 tbsp flour
2 cups hot milk
1/4 tsp nutmeg
3/4 cup grated Gruyere, divided
1/2 cup grated Parmesan
1/4 cup bread crumbs
2 tbsp melted butter


1. Preheat oven to 375 F.

2. Boil the cauliflower for about 5 minutes, drain.

3. In a saucepan over medium/low heat, melt 4 tbsp unsalted butter. Add the flour and stir constantly for 2 minutes. Pour in the hot milk and whisk to a boil. Whisk constantly until the milk mixture thickens, shouldn't take more than a minute.

4. Take the saucepan off the heat and add the nutmeg and cheeses (Save a little Gruyere for later). Stir well until the cheeses melt.

5. Pour about 1/3 of the cheese sauce into a baking pan (about 7x11 inches). Top with cauliflower and the rest of the sauce.

6. Combine the breadcrumbs and melted butter and drizzle on top. Sprinkle with the remaining Gruyere.

7. Bake for 30 minutes.
