Cauliflower and Cheese Quiche


Cauliflower and Cheese Quiche
Yield: 1 x 9-10" quiche


1 x Single Pie Crust (Here is my recipe for Easy Pie Crust)
1 small head of cauliflower (about 455 g), chopped and steamed/boiled for 5 minutes, drained and cooled
1/2 cup (125 ml) whole milk
2 large eggs
Salt to taste
2 cups (210 g) shredded cheese of your choice (Jarlsberg, Cheddar, Fontina, Swiss...)


1. Roll out your pie crust and fit it into your pie plate. Blind bake if desired. 

2. In a small bowl, whisk together the eggs, milk and salt.

3. Preheat oven to 350 F (180 C, gas mark 4).

4. Sprinkle a little bit of cheese over the bottom of the dough. Scatter the cauliflower, add the egg mixture and top with the shredded cheese.

5. Bake for about 45 minutes.
