Banana Bread



Banana Bread
Yield: 2 loaves

Ingredients

3/4 cups (180 g) unsalted butter, at room temperature, plus extra for greasing
2 cups (500 g) packed brown sugar
6 large eggs
6 ripe bananas, mashed
1 cup (250 ml) buttermilk
4 cups (630 g) all purpose flour
2 tsp (12 g) baking soda
2 tsp (10 g) baking powder
1 tsp (4 g) nutmeg
1 tsp (7 g) salt


Directions

1. Preheat oven to 350 F (180 C or gas mark 4).

2. Butter and flour 2 loaf pans (9 x 5", 23 x 13 cm).

3. In a large bowl, using a hand mixer, mix the butter and sugar together until smooth.

4. Add the eggs and bananas and mix until smooth.

5. Add the buttermilk and mix until just combined.

6. In another bowl, mix dry ingredients.

7. Add dry ingredients to banana mixture and mix with beaters until combined - mixture will be lumpy.

8. Pour batter into each pan until about 2/3 full and bake for 55-60 minutes until a toothpick inserted into the center comes out clean.  Cool on a baking rack.

Tips:
- store in the fridge after the first day and eat within 5 days
- this bread freezes very well
